Happy Taiwanese Children’s Day! To celebrate the holiday, we asked actress and author Ding Ning — who has a cookbook out on salads — to share one of her favorite kid-friendly dishes. She picked a veggie udon for reasons we can really get behind: its color factor. “I often make this for my daughter,” she says, “and usually choose differently colored vegetables to make the dish look more colorful.” Bonus for moms: “It’s easy to prepare,” Ding adds, “and the variety of vegetables is healthy, too.”
